“A cena con la Taiadela”, the event organised by the restaurants of Villafranca di Verona is back. The aim is to promote tagliatella, a typical local dish that was born between the 19th and 20th centuries in the famous “Caffè Fantoni”, a historic café in Villafranca. Over the years it has become a cultural meeting place.
Six restaurants are taking part, one every Thursday from today, to taste tagliatelle at the table or to take away. New this year: customers can also choose to take portions of tagliatelle home with them.
The recipe itself seems very simple. Eggs and flour are the basic ingredients for a pasta that requires expert hands full of passion. Over the years, restaurateurs have learnt to ‘dress’ this type of pasta with succulent sauces: from the classic ragù to duck ragù, or according to the chef’s imagination, and even in different sizes. In an evolutionary quest, the ‘paparela’ has become the ‘taiadela’ and today the ‘tagliatella’. You can comfortably use all these terms to define this famous dish. And you are welcome! Don’t forget to finish the meal with Villafranca’s typical dessert: sfogliatine.
